General Responsibility:
To plan, direct and supervise camp's food service for children with disabilities and disadvantaged youth.
Qualifications:
- Be 18 years or older.
- A student enrolled in an Accredited Undergraduate Dietetic/Nutrition program.
- Experience and/or knowledge with the institutional food service setting; camp experience desirable.
- Supervisory experience.
- Experience with planning and preparing well-balanced meals.
- Knowledge of standards of food preparation, serving and kitchen procedures.
- Possess the ability to relate well to all age groups.
- Organized and task oriented.
- Exhibit the ability to place the needs of the campers and the camp above their own.
- Be a team player and relate positively to vendors, staff, volunteers and campers.
- Have good health, vitality and physical stamina.
Specific Responsibilities:
- Develop order list for Camp Director Approval.
- Assist Camp Director in the purchasing of food.
- Coordinate special dietary needs with the Camp Nurse and Camp Director.
- Receiving and organize inventory.
- Keep the kitchen and dining hall in a clean and sanitary state at all times.
- Food preparation.
- Assure quality and presentation of foods.
- Ordering, receiving and organization of inventory.
- Deep cleaning of kitchen and dining hall on a regular basis.
- Dish sterilization program.
- Plan menus and utilize leftovers.
- Report any kitchen equipment damage to the Camp Director.
- Supervise and assist in deep cleaning of kitchen and dining hall on a regular basis.
- Attend and participate in pre-camp meetings and pre-camp preparation work.
- Train and supervise volunteers and those assigned to assist you.
- Enforce camp rules consistently.
- Meet with other administrative staff as necessary.
- Rotate camp responsibilities in conjunction with other Program Specialists and interns under the direction of the Camp Director and Program Manager including meal supervision, twilight activities, campfires, closing ceremonies and special events.
- Assumes all other duties and assignments deemed appropriate by the Camp Director.
Essential Responsibilities:
- Ability to operate gas, electrical and mechanical equipment in the food service area.
- Maintain accurate records (e.g., menus, food orders, inventories)
- Visual Ability to determine the cleanliness of the entire kitchen and dining room and the ability to supervise corrective action as needed.
- Physical strength to lift heavy pots and pans and to move food supplies.
- Ability to assess the condition of food upon preparation and in storage.
- Ability to provide supervision to kitchen staff.
